Thanks to its intelligent temperature-control system, humidity and temperature are precisely regulated, ensuring that the proofing time for bun blanks is accurate to within ±1 minute. As a result, product consistency has improved by 40% compared to traditional methods.
In the shaping stage, the combination of bionic kneading technology and microcomputer programming enables the robotic arm to mimic the force and trajectory of manual kneading, achieving a gluten uniformity rate of over 95% and providing a stable foundation for subsequent baking. During the baking phase, a four-wheel-drive temperature-controlled oven is employed, featuring independent temperature control for the upper and lower layers, which ensures a uniformly caramelized crust on the surface of the bread slices while maintaining a 15% higher internal moisture retention compared to conventional baking methods, resulting in a crispier texture. In the seasoning stage, an automated oil-spraying and seasoning-dispensing system is utilized, allowing precise control of the oil-to-salt ratio for each bread slice. The system supports rapid switching among more than ten flavors, including chicken, cumin, and five-spice, thereby meeting the diverse demands of the market.
The application of this technological system has enabled a single production line to achieve a daily capacity exceeding 3 tons, while reducing labor costs by 65%. Moreover, thanks to the use of low-temperature steam and far-infrared heating technologies, energy consumption has been reduced by 30% compared to conventional equipment. Currently, more than 200 enterprises nationwide have completed the upgrade of their production lines. The products now boast top-tier industry performance in terms of re-steaming capability and shelf life, providing a replicable technological pathway for the industrial-scale production of steamed bread slices.
